Mac-N-Cheese (gluten-free, dairy-free, of course!)

I love, love, love Mac-n-Cheese.  Like, seriously, in love.  When I was a kid I almost literally lived on boxed mac-n-cheese.  Fortunately, I knew how to boil water so I could make mac-n-cheese all the time.
 
Unfortunately, between the gluten, the processed “cheese” (let’s be honest, whatever that stuff is, it isn’t cheese) and all of the artificial crap in it made me sick.
 
So, I was determined to make something that wasn’t going to make me sick, that tasted delicious and that was as easy to make as the boxed stuff.
 
And here it is!
 
What’s Smart & Sexy About This Dish?
 
4 ingredients, very little cooking…basically, if you can heat something on a stove and press “start” on the oven, you can make this.
 
No gluten, no dairy AND tastes delicious. What can be smarter or sexier?

Mac-n-Cheese

 
[serves 4-6]
 
(Gluten-Free, Dairy-Free, Easy To Make & Sooo Delicious)
 
1 can full fat coconut milk
1 8 oz bag Non-Dairy Cheddar Flavored Cheese
1 tablespoon Sea salt
 
½ bag gluten free elbow or penne noodles
 
Cook noodles as directed.
 
While they are cooking, in a medium pot on low heat, bring coconut milk to a simmer; once coconut milk is simmering add in “cheese” and sea salt and stir until melted (this may take a few minutes).
 
When noodles are done and the cheese is melted, mix the noodles into the “cheese”, pour the "sauce" over the noodles (they may need a little bit more sea salt to bring out the flavor of the cheese, feel free to adjust to taste) and pour into a Pyrex dish.  Bake at 350 for about 1/2 hour-45 minutes. Serve warm or cold.
 
**Note** This is even better when reheated (on a stovetop or toaster oven, not a microwave)!
