Summer Paradise Millet

Often thought of a bird food and overlooked, I think that Millet is one of the Smartest and Sexiest of all the cereal grains.
 
In the treatment of blood sugar imbalances, Millet is the preferred grain. It also has the richest amino-acid protein profile of all of the cereal grains, the highest iron content, is gluten-free and can be either found in the bulk section of your local natural foods store or online (there are soo many great recipes you can make with millet, I highly suggest trying different things with it!).
 
The great thing about this recipe is that it is easily adaptable.  After you cook the millet, you can throw out your measuring cups and add in as much of or as little of the remaining ingredients as you like!
 

Summer Millet Paradise

 

 Ingredients:
2 cups water
1 cup millet, rinsed
3/4 teaspoon sea salt (optional)
1 cup coconut, rice or almond milk
3/4 cup toasted coconut
3/4 cup chopped fresh pineapple
3/4 cup chopped cashews (or nut of your choice)
2 tablespoons flaxseeds
2 tablespoons coconut nectar or maple syrup
 
1 tablespoon vanilla extract
 
In a large, dry medium sized pot, toast the raw millet over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant.  Be careful not to burn.
 
Add the water and salt to the pan cover the pot and bring to a boil (since the pan is hot the water will sputter a bit when you pour it in).
 
Bring the water to a boil, then reduce heat to low and let simmer until the millet soaks up all the water, usually about 15 minutes.
 
Remove from the heat and let stand for about 10 minutes.
 
After millet cools for a bit, transfer to a large bowl and fluff with a fork.  Mix in remaining ingredients and serve!
