These were the exact words I thought in December of 2005.
I recently quit my first job as a therapist at a group home for adolescent girls.
My lease was up on the house I was renting and since I quit my job and didn’t know what I was going to do, I moved back in with my parents (God bless them for letting me move back in!).
I had ZERO ideas about what I wanted to do with my life.AND, even though I was diagnosed with pre-diabetes, I was eating every sugary thing in site ~ it was the holiday season after all, isn’t that what you are supposed to do???
I got to a point where I literally could not get out of bed ~ my body felt as if it had cement running slugging through it.
Each morning I woke up even more exhausted than I did when I went to bed.
To say that I felt pretty sh*tty would be an understatement.
Ok, I do know that this was a 1st world problem and others have had way sh*ttier experiences…And, this was my reality and wanting to die...

Every human experiences some level of self-sabotage at some point in their lives.
It seems illogical on the surface —why would we intentionally do things that prevent us from getting what we think we want?

So what is “Anxiety”?
Google says anxiety is your body’s natural response to stress.

Beyond money, time, jobs, stress is the belief that reality should be different than it currently is.

If you google it…. you’ll probably find a definition similar to:

What Causes Stress?
If you google it... you’ll probably find that money, work, and poor health cause stress.
AND…that’s not really true.
There are plenty of people in the world who have no money and don’t experience stress.
AND, there are plenty of people in the world who have a TON of money and experience a lot of stress.
It’s not money that causes stress.
It’s your BELIEF about money, work and health (and every other thing in your life) that creates the energetic frequency you live in, which actually causes stress.
What Causes Stress to Increase?
If you google it….you’ll probably read that having many major life changes can add to stress or a lot of little “stressors” in a short period of time.
This recipe, like many of my others, happened purely by accident.
I made a delicious sugar-free Hot Chocolate then put the leftovers in the fridge for later. When I went to heat it up again, it was solid in state and I realized that it was as good (if not better) than the Hot Chocolate.
Because I like really easy recipes, I did some simple tweaks and this Chocolate Mousse was born. And has been a HIT everytime I bring it with me to parties.
Some things to know:
I make in a Vitamix—I haven’t tried it in a regular blender so I can’t guarantee what it will turn out like (a friend did it and said it was good, another said it never hardened...but that's because she used unrefined coconut oil ).
It makes A LOT.
8 cups to be exact.
While that may seem like a lot, when you try it, you will be glad that you have so much. What I typically do is portion out 1 cup servings and have one (or two, lol) each day.

I found this recipe in Veganomicon, The Ultimate Vegan Cookbook and it so surprisingly tastes just like a Sloppy Joe that you’ll never miss the meat (don’t worry, it’s just as sloppy as the meat-version).
Wanting a little more of a kick I added in cayenne and black pepper (which is surprising since I’m not one for “kick” in my food).
If you have a good gluten-free bun then you’ll be taken back to childhood. Or, you can do it like I do and forgo the bun (In the not-so-pretty picture it’s on a piece of gluten-free bread, open-face style…oh, and I didn't have any green peppers so that's why it looks so blah & mono-color).

Lentils--For those of us with blood sugar issues, lentils are our best friends! Their protein content and soluble fiber trap carbohydrates slowing down digestion so we don’t have crazy blood sugar plummets. And that keeps ups Smart and Sexy all day long!
Go to any restaurant and order a creamy soup and guaranteed it has some form of dairy in it.
Because most chefs don’t realize that you can make soup “creamy” without adding in the dairy.
Which is so annoying for those of us who can’t have dairy.
(I think I should go on a mission to educate restaurants on how to make non-dairy soups…seriously, if the soups don’t have dairy then they have gluten in it…what’s a girl with food sensitivities to do? Oh yeah, make my own--it’s better anyway :) )
How do I make “creamy” soups without the cream? Using oats is one little fantastic secret I learned at The Natural Gourmet and I swear by it.

I’m pretty much a wimp when it comes to spice (and that is putting it mildly) so I think It is a bit spicier than I like BUT everyone I’ve made it for thinks it's fine. If you like the heat, feel free to turn it up a notch.
AND--this makes a HUGE Batch. I like to cook 1x and eat many times--feel free to make it how it is and then put some in the freezer or make half the batch.
